CHARACTERISTICS: This wine is the union of my remaining treasures, the heads and clusters of Singular Vineyards. I have the freedom to enjoy them, to show who I am and where I come from. Effort, pleasure, passion, suffering, perseverance—my whole life in a bottle. These are Singular Vineyards planted between 1920 and 1940 in Elciego, Leza, Navaridas, and Laguardia. The soils range from the gray limestones at the foot of the Sierra Cantabria to Elciego, with Tertiary rocks composed of sandstones and marl clays. The vineyards are certified for Organic Viticulture. VARIETIES: Tempranillo and others. PRODUCTION: Traditional production through carbonic maceration, intracellular fermentation with whole grapes, without crushing. Spontaneous fermentation in open bocois. Aged for 1 year in the same bocois where alcoholic fermentation took place. VISUAL PHASE: Very intense violet-red color. AROMATIC PHASE: Aromas of cherry pulp and red plum, mixed with hints of clove and crushed black pepper. Almond and toasted notes emerge, with a caramel-like, pleasant, and attractive profile. TASTE PHASE: Broad and voluminous on the palate, with a very soft, fine-textured tannin. Spicy and mineral retronasal profile, giving it elegance. As it opens, menthol notes of rosemary and lavender appear, with a seductive balsamic profile.
